Honeydew honey or Forest honey is a type of honey made,not from blossom nectar, but from honeydew excreted by insects such as aphids. It has a strong flavour ,mineral rich ( potassium, phosphorus etc.). Honeydew is made in late summer. Dark to very dark honey, woody and medium sweetness .
Wildflower honey is made by bees that have collected nectar from a source of wildflowers. The taste and composition of wildflower honey can depend upon the variety of flowers in bloom at the time the honey is made. This is a delicate honey with a hay colour, sweet and floral favour.
